The Ribeye consists of 2 different muscles: the longissimus dorsi and the spinalis dorsi. Both of these muscles are exceptionally tender and juicy. The rich marbling slowly melts and bastes the steak while cooking. That melting is what creates the buttery Prime Rib flavor. The only difference between Rib Steaks and Ribeye Steaks is that the Rib Steak has a portion of the bone intact.
