Oven
- Pre-heat oven to 375 F.
- Place pork chop in an uncovered shallow pan.
- Cook at 375 F.
- Approximate 1" pork chop should be cooked for 20-25 minutes.
- Use instant-read thermometer to ensure internal temperature has reached 145 F.
Grill
- Pre-heat grill with medium-high heat.
- Lightly oil grate.
- Place pork chop 4" from heat.
- Approximate 1" thick pork chop should be cooked for 8-12 minutes. Flipping once.
- Use instant-read thermometer to ensure internal temperature has reached 145 F.
Pan Fry
- Pre-heat skillet over medium-high heat.
- Add 1 tablespoon of butter to cover surface of skillet.
- Add pork chop to skillet.
- Approximate 1" thick pork chop should be cooked for 8-10 minutes. Flipping once.
- Use instant-read thermometer to check that internal temperature has reached 145 F.
Mexican Mole Pork Chops
Ingredients
- 4 - 1.5" thick pork chops, bone in.
- Dry Rub: 1 tablespoon brown sugar, 2 teaspoons onion powder, 1.5 teaspoons cocoa, 1 teaspoon garlic powder, .25 teaspoon ground chipotle pepper (depending on heat desired), dash of ground paprika, dash of ground cinnamon, dash of ground allspice.
Cooking Directions
- In a small bowl, combine dry rub ingredients; rub onto both sides of pork chops. Set aside for 30 minutes.
- Preheat grill to 400-450 F. When ready to cook, spray a light coat of cooking spray on pork chops to keep them from sticking to the grill.
- Place on hot grill. Cover; cook for 7 minutes per side or until internal temperature reaches 160 F. Use an instant-read thermometer.
- Let rest for 5-10 minutes.
