All lambs are raised outdoors with healthy diets of natural grasses, crops and grains. The taste of our lamb can be described as mild, yet delicious and flavorful. Oven

  1. Preheat oven to 350 F.
  2. Salt and allow lamb chops to warm to room temperature.
  3. Lay chops in a baking tray, drizzle with olive oil, black pepper, and your favorite dried herb.
  4. Rub seasoning into meat.
  5. Cook in oven for approx. 20 minutes, turning halfway so they cook evenly.
  6. Use an instant read thermometer to ensure that internal temperature has reached 145 F.

Grill

  1. Salt and allow lamb chops to warm to room temperature.
  2. Preheat grill to medium heat.
  3. Lightly oil grate.
  4. Cook for 5-6 minutes per side or until desired doneness.
  5. Use an instant read thermometer to ensure that internal temperature has reached 145 F.

Rosemary Crusted Lamb Chops

Ingredients

  • 2 lamb loin chops, 2 tablespoon minced fresh rosemary, 2 teaspoons salt, 1 teaspoon freshly ground black pepper, 1 minced garlic clove, 4 tablespoons olive oil

Cooking Instructions

  1. In a small bowl, mix the rosemary, salt, pepper, garlic, and 2 tablespoons of olive oil together.
  2. Coat lamb chops with mixture, massaging into the meat with your fingers.
  3. Heat remaining 2 tablespoons of olive oil in a saute pan over high heat.
  4. When oil is hot, sear lamb chops on both sides for 1-2 minutes.
  5. Turn heat to medium and continue to cook for a few more minutes (approx. 3-5 minutes).
  6. Use an instant read thermometer to ensure internal temperature has reached 145 F.
  7. Remove chops from heat and allow to rest for 5 to 10 minutes before serving.
